Il y a longtemps que j'avais envie d'essayer un gâteau roulé à la courge, mais je ne peux pas non plus faire que des trucs à la citrouille. Là c'est Noël donc j'ai le droit. Moi j'ai adoré mais je suis pas très objective vu que je me damnerais pour tout ce qui est noix grillées et courge en version sucrée. Je suis très fière de mon gâteau super souple qui ne s'est pas fendillé du tout et n'a pas collé au papier. Avec une crème au beurre bien ferme je pense sans prétention que j'aurais obtenu un roulé parfait. Je vous conseille d'utiliser comme moi une cuillère en bois pour rouler ou tout autre cylindre car ça évite de casser la pointe de la spirale. C'est la première fois que j'utilisais un torchon mouillé sur le papier sulfurisé et ça marche super bien. L'humidité traverse le papier et empêche le gâteau de se dessécher, et par là-même de se casser en le déroulant, mais aussi de coller au papier. Pardonnez moi mes photos sombres horribles.
Ingrédients:
Gâteau aux noisettes:
- 5 blancs d'oeufs
- 160 g de sucre glace
- 130 g de noisettes
- 50 g de sucre
- 75 g de farine
Crème au potimarron:
- 400 g de potimarron cuit
- 100 g de sucre
- 3 oeufs
- 5 c. à soupe de Maïzena
- 25 g de beurre
- 1/2 c. à café de cannelle
- 1 pincée de 4 épices sans poivre
Décor:
- environ 20 cl de crème liquide très froide
- chocolat noir
- noisettes entières
- sucre
- emporte-pièces en forme d'étoile
- 1 plaque ou un morceau de polystyrène
Déroulement:
La veille, allumer le four en position grill. Mettre les noisettes dans un plat et les glisser dans la partie supérieure du four mais pas trop près du grill. Les faire colorer et laisser refroidir. Réduire en poudre au robot.
Préchauffer le four à 160°C. Huiler un plat à bûche ou une plaque du four et poser dessus une feuille de papier sulfurisé. Passer le sucre glace et la farine au tamis. Ajouter les noisettes et mélanger intimement avec les doigts car les noisettes vont être collantes. Battre les blancs d'oeufs en neige. Quand ils sont bien fermes, ajouter le sucre et fouetter encore une minute. Avec une spatule mélanger délicatement les blancs avec les ingrédients secs. Étaler sur le papier sulfurisé et enfourner pendant environ 15 minutes, le gâteau doit être juste doré.
Mettre un torchon propre dans de l'eau et l'essorer. Poser le gâteau avec le papier sur le plan de travail. Poser une autre feuille de papier sulfurisé dessus et poser le torchon essoré dessus. Rouler le gâteau en s'aidant d'une cuillère en bois ou d'un autre cylindre. Laisser refroidir le gâteau environ 30 minutes, le temps de préparer la crème.
Mettre le potimarron, les oeufs, la Maïzena et le sucre dans le bol du robot et mixer en purée. Verser le mélange dans une casserole et cuire à feu doux en remuant sans cesse au fouet à main. Arrêter la cuisson aux premiers bouillons. Ajouter le beurre et mélanger. Mettre la casserole au-dessus d'un bain-marie d'eau froide et remuer régulièrement jusqu'à ce que le crème tiédisse.
Dérouler le gâteau grossièrement, éviter de l'aplatir complètement. Enlever le torchon et le papier sulfurisé du dessus. Étaler la crème et rouler le gâteau à l'aide du papier du dessous. Enlever le papier et laisser refroidir complètement. Recouvrir de film et réfrigérer une nuit.
Le lendemain, faire fondre du chocolat et l'étaler en rond sur du papier sulfurisé. Quand le chocolat commence à prendre, faire des marques avec l'emporte-pièce et laisser refroidir complètement avant de détacher les étoiles du papier.
Planter un cure-dent dans la partie la plus large des noisettes. Procéder délicatement car les noisettes risquent de se partager en deux. Mettre du sucre en poudre et un peu d'eau dans une casserole et faire cuire sans remuer jusqu'à l'obtention d'un caramel blond. Laisser refroidir une minute et tremper les noisettes dedans. Soulever les noisettes et laisser couler le caramel. Quand il commence à durcir, couper aux ciseaux et planter le cure-dent sur le dessous d'une plaque de polystyrène. Laisser durcir ainsi. Ne pas mettre au frigo.
Fouetter la crème en chantilly ferme et la sucrer au goût. Étaler sur la bûche et faire des stries avec une fourchette. Réfrigérer une heure avant de déposer dessus les étoiles en chocolat et les noisettes caramélisées.
Toasted hazelnuts and red kuri squash yule log
I've been meaning to make a rolled pumpkin cake for a while but I can't always be making pumpkin things. But now it's Christmas time so I'm allowed to. I loved it but I'm quite biased for I'm ready to be damned for anything that has toasted nuts and squash in its sweet version. I am very proud of my super flexible cake that didn't crack at all or stick to the parchment. Without being pretentious I think that if I had filled it with a firm buttercream I would have mastered a perfect rolled cake. I advise you to use my wooden spoon trick or any other small cylinder to roll it because it prevents the end of the spiral from breaking. It's the first time I've used a wet cloth on the parchment and it works great. Moisture gets through the paper and prevents the cake from drying out, and therefore from breaking, and also from sticking to the paper. Forgive me for my horrible dark photos.
Ingredients:
Hazelnut cake:
- 5 egg whites
- 160 g icing sugar
- 130 g hazelnuts
- 50 g sugar
- 75 g flour
Pumpkin cream:
- 400 g cooked red kuri squash
- 100 g sugar
- 3 eggs
- 5 tbs cornstarch
- 25 g butter
- 1/2 tsp cinnamon
- 1 pinch pumpkin spice
Decoration:
- about 20 cl cold whipping cream
- dark chocolate
- whole hazelnuts
- sugar
- star shaped cookie cutter
- a piece of polystyrene
Directions:
The day before, set the oven on high broil. Put the hazelnuts in a dish and place them on one of the top shelves of the oven but not too close to the broiler. Let them get brown and then let cool. Grind into a fine powder in the food processor.
Preheat the oven to 160°C. Oil a cookie sheet and line it with parchment paper. Sift the flour and icing sugar. Add the nuts and mix thoroughly with your fingers because the nuts will be sticky. Beat the egg whites until stiff. Add sugar and beat another minute. With a spatula, gently mix the egg whites with the dry ingredients. Spread on parchment paper and bake for about 15 minutes, the cake should be just golden.
Put a clean cloth in water and wring it. Place the cake with the paper on the worktop. Lay another sheet of parchment paper on top and place the cloth on it. Roll up the cake with the help of a wooden spoon or other cylinder. Let cool for 30 minutes while you prepare the cream.
Place the pumpkin, eggs, cornstarch and sugar in the bowl of the food processor and puree. Pour into a saucepan and cook over low heat, stirring constantly with a hand whisk. Stop cooking as soon as it starts boiling. Add butter and stir. Place the pan over a cold water bath and stir regularly until the cream cools down a bit.
Unroll the cake roughly, avoid flattening it completely. Remove the cloth and parchment paper on the top. Spread the cream and roll the cake with the help of the bottom parchment. Remove the parchment and let cool. Cover with film and refrigerate overnight.
The next day, melt the chocolate and spread in the shape of discs on parchment paper. When the chocolate begins to set, press the cookie cutter on it and let cool completely before removing the stars from the paper.
Plant a toothpick in the largest part of the hazelnuts. Proceed carefully because the nuts may split in two. Put the sugar and a little water in a saucepan and cook without stirring until you get a light caramel. Let cool a minute and dip the nuts in it. Lift the nuts above the pan and let the caramel run. When it begins to harden, cut with scissors and plant the toothpick on the underside of a piece of polystyrene. Allow to set in that position. Do not refrigerate.
Whip the cream stiff and add sugar to taste. Spread on the log and make grooves with a fork. Refrigerate one hour before decorating with the chocolate stars and caramelised hazelnuts.
