Jalapeños with cream cheese and bacon
Here is a simple and typical American recipe that fully met my expectations. For a while I was reluctant to try it because it seems to just be made of fat and most importantly, I was afraid my throat would burn like hell. Nay. It was scrumptious. It melts in your mouth and has just the right amount of heat. I kept my cheese plain but you can surely add onions or herbs. In France, if you can't find Anglo-Saxon style bacon, thin slices of smoked pork belly will do the job. If you're a sissy you can cut the slices in half. But you can't replace jalapeños, without them it's just not possible. If you are lucky enough to find them, you'll be a star this summer at barbecue parties.
Ingredients for 8 thingies:
- 4 jalapeños
- 8 slices of bacon
- cream cheese
Directions:
Cut the jalapeños in half, lengthwise. Remove the seeds and white membranes. Smear some cream cheese into each half and wrap with bacon. Bake in a moderate oven until the bacon is golden brown. Serve immediately or let it cool down a little.
